Beets: Nose to Tail

Just a quick note about beets. Use the greens! They’re delicious. To make them go further you can mix them up with other types of greens you have laying around, such as spinach, kale, chard, turnip or radish. The sky is pretty much the limit. Here are some ideas to get you started:

  • Coarsely chop them and saute them with the olive oil and shallots
  • Same as above except add some chopped bacon too
  • Cook them down in some heavy cream

    Add them to any of the following:
  • Pasta
  • Quiche
  • Stir-fry
  • Soup
  • Omelettes & frittatas

So, use your imagination and use those greens.
